Born and raised in Jalisco, Mexico, Chef Cesar grew up immersed in the bold flavors and family traditions of authentic Mexican cooking. From a young age, he honed his skills helping his mother run her restaurant in Guadalajara, learning the art of balancing rustic comfort with vibrant, regional spice.
With more than three decades of culinary experience, Chef Cesar built an impressive career across some of Chicagoland’s most respected kitchens, including Lettuce Entertain You Enterprises, Maggiano’s, Cenitare Restaurant Group, Pete Miller’s Seafood & Prime Steak, and Francesca’s Restaurant Group. His background in Italian and American fine dining brings an elevated level of craftsmanship, precision, and creativity to every dish he creates.
Now, Chef Cesar returns to his roots — bringing a renewed passion for authentic Mexican cuisine and introducing never-before-seen dishes inspired by the diverse regions of Mexico.
